Every few months I remember to eat healthier! l usually say I’m “trying to try” again! lol This Greek salad allows me to keep things light while still letting me have all the great flavors I enjoy.
While you can definitely customize for your taste, here’s what I used:
Roasted Red Peppers
Banana Pepper Rings
Greek Vinaigrette Salad Dressing
Sometimes I switch things up and add cherry tomatoes, fresh green bell pepper, and a bit of diced red onion. I feel like as long you have a a heap of greens, feta cheese, and a tasty Greek dressing you’re on the right path.
Assembly is pretty standard…check out these pics for my method.
I like to dress the greens and toss it around a bit before adding the toppings to make sure the greens are coated, but not unnecessarily soaked. A little salad dressing can go a long way.
As you can see, I just sliced or chopped the ingredients to be bite sized and layered them all on top of the lettuce. You shouldn’t need anymore salad dressing, but you can definitely add a drizzle at the end if you’d like!
One of my favorite mall food court meals is from the Chinese restaurant. Pizza is fine, and fries are always nice…but there’s nothing quite like getting that combo with two meats, fried rice, and an egg roll! These days I rarely go to the mall, and even more rarely go to the food court for my favorite treat. That’s why I needed to recreate that delicious Teriyaki chicken at home!
We all enjoy fried food, right? If you choose to prepare fried food, how many of you enjoy that fried food smell that’s left in your kitchen? *crickets* Exactly, that’s definitely not my favorite part. Oh, there’s also that whole thing about fried foods not being the healthiest…but honestly that hasn’t been my main concern! lol Whatever the reason, I think it’s good to have some cooking alternatives that can rival frying.
Don’t you just love a rotisserie chicken? I do! They’re convenient, tasty, and pretty inexpensive. While I know you can make your own, I’m talking about the store-bought kind. These chickens aren’t huge, but I’ve still found ways to get multiple meals out of them.
Just like everybody else, I’m trying to try again…so here come all the healthy meals! lol Not to worry though…you know I like to keep the flavor on point! The salmon I paired with my Vegan Green Beans didn’t disappoint!
